Egg in a Cup

& that’s exactly what this is, an absolute Irish home comfort for me.

 

DIRECTIONS: 

  1. Boil two eggs, medium – hard but will depend on your own taste.
  2. Deshell and pop into a cup.
  3. Add a ½ tsp of butter
  4. Pinch of salt
  5. Mix and mash until all combined.
  6. Enjoy

 

Tip: I usually have one whole egg and one egg white.
