Eggocado Toast (VG)

Ingredients:

50g or 1/2 AVOCADO

2 BOILED or Poached EGGS (Vegan option TOFU)

Sliced Toast.  (I love pikelets)

Chilli Flakes

50g baby plum tomatoes

 

Directions:

  1. Pop GF Bread in Toaster
  2. Mash up avocado & 1 egg and 1 egg white
  3. Top toast chunky eggocado mash
  4. Add sliced tomatoes
  5. Sprinkle with Chilli Flakes and a squeeze of lime

 

Notes:

(optional) 20g Feta Cheese
